We are so happy to offer you our premium EVOO, made from our 2 varieties of olives, Manzanillo & Correggiola, harvested right here from our beautiful farm. We harvest our olives when they are still green, unripe. Even though we don't make as much olive oil this way, it is the best time to harvest, giving our olive oil high medicinal properties, and its beautiful peppery flavour. Once the olives are picked, they are cold pressed, only once, the same day they are harvested. It is truely special Extra Virgin Olive Oil.
